Method
- Place the beef chuck roast in your slow cooker.
- Sprinkle the dry onion soup mix over the roast.
- Pour the beef broth around the roast.
- Cover and cook on low for 4 to 6 hours, or until the beef is tender and easily shreds.
- Remove the roast from the slow cooker and place it on a cutting board. Use two forks to shred the beef.
- Return the shredded beef to the slow cooker and stir it into the juices.
- To assemble the sandwiches, spread mayonnaise on the split hoagie rolls, if desired.
- Top the rolls with shredded beef and provolone cheese, if using.
- Serve the sandwiches with the slow cooker juices on the side for dipping.
Notes
You can strain the juices from the slow cooker to make a clearer au jus for dipping. For a richer flavor, you can broil the assembled sandwiches with cheese until melted.
