Simple French Dip Sandwiches

Ingredients
  

For the Beef
  • 3 pounds beef chuck roast
  • 1 packet dry onion soup mix
  • 1 cup beef broth
For the Sandwiches
  • 6 hoagie rolls split lengthwise
  • 1 cup mayonnaise optional
  • 1 cup provolone cheese slices optional

  • Tongs
  • Forks
  • Cutting board

Method
 

  1. Place the beef chuck roast in your slow cooker.
  2. Sprinkle the dry onion soup mix over the roast.
  3. Pour the beef broth around the roast.
  4. Cover and cook on low for 4 to 6 hours, or until the beef is tender and easily shreds.
  5. Remove the roast from the slow cooker and place it on a cutting board. Use two forks to shred the beef.
  6. Return the shredded beef to the slow cooker and stir it into the juices.
  7. To assemble the sandwiches, spread mayonnaise on the split hoagie rolls, if desired.
  8. Top the rolls with shredded beef and provolone cheese, if using.
  9. Serve the sandwiches with the slow cooker juices on the side for dipping.

Notes

You can strain the juices from the slow cooker to make a clearer au jus for dipping. For a richer flavor, you can broil the assembled sandwiches with cheese until melted.
