- Preheat your oven to 375°F (190°C). Butter your 10-inch cast iron skillet.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a large bowl, cream together the softened butter and 1 cup of sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
- Spread the batter evenly into the prepared skillet.
- In a separate small bowl, toss the sliced peaches with 2 tablespoons of sugar and the cinnamon.
- Arrange the coated peach slices over the batter in the skillet.
- Bake for 30-35 minutes, or until a toothpick inserted into the center of the cake comes out clean and the peaches are tender.
- Let the cake cool in the skillet for at least 10 minutes before serving.
Notes
Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream.
