Skillet Peach Cake

This skillet peach cake is a simple dessert featuring fresh summer peaches.

Ingredients
  

For the Cake
  • 1.5 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp salt
  • 1 cup granulated sugar
  • 0.5 cup unsalted butter softened
  • 2 large eggs
  • 0.5 cup milk
  • 1 tsp vanilla extract
For the Peaches
  • 3 cups fresh peaches sliced
  • 2 tbsp granulated sugar
  • 1 tsp cinnamon

  • 10-inch cast iron skillet
  • Mixing bowls
  • Whisk
  • Spatula

Method
 

  1. Preheat your oven to 375°F (190°C). Butter your 10-inch cast iron skillet.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, cream together the softened butter and 1 cup of sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
  6. Spread the batter evenly into the prepared skillet.
  7. In a separate small bowl, toss the sliced peaches with 2 tablespoons of sugar and the cinnamon.
  8. Arrange the coated peach slices over the batter in the skillet.
  9. Bake for 30-35 minutes, or until a toothpick inserted into the center of the cake comes out clean and the peaches are tender.
  10. Let the cake cool in the skillet for at least 10 minutes before serving.

Notes

Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream.
