Sloppy Joe Bowls with Crispy Potatoes

Ingredients
  

For the Crispy Potatoes
  • 1.5 lbs potatoes cut into 1/2-inch cubes
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
For the Sloppy Joe
  • 1 lb ground beef
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Method
 

  1. Preheat your oven to 400°F (200°C). Toss the cubed potatoes with olive oil, salt, and pepper on a baking sheet. Spread them in a single layer.
  2. Roast the potatoes for 25-30 minutes, or until they are tender and crispy, flipping them halfway through.
  3. While the potatoes are roasting, cook the ground beef in a large skillet over medium-high heat. Break it apart with a spoon until browned. Drain off any excess fat.
  4. Add the chopped onion to the skillet with the beef and cook until softened, about 5 minutes.
  5. Stir in the minced garlic and cook for 1 minute more until fragrant.
  6. In a small bowl, whisk together the ketchup, brown sugar, Worcestershire sauce, and Dijon mustard.
  7. Pour the sauce mixture over the ground beef and onion. Add salt and pepper. Stir to combine and simmer for 5-10 minutes, allowing the sauce to thicken slightly.
  8. To assemble the bowls, divide the sloppy joe mixture among four bowls. Top each bowl with a generous portion of the crispy roasted potatoes.

Notes

You can add other toppings like shredded cheese, a dollop of sour cream, or chopped chives if desired.
