- Preheat your oven to 400°F (200°C). Toss the cubed potatoes with olive oil, salt, and pepper on a baking sheet. Spread them in a single layer.
- Roast the potatoes for 25-30 minutes, or until they are tender and crispy, flipping them halfway through.
- While the potatoes are roasting, cook the ground beef in a large skillet over medium-high heat. Break it apart with a spoon until browned. Drain off any excess fat.
- Add the chopped onion to the skillet with the beef and cook until softened, about 5 minutes.
- Stir in the minced garlic and cook for 1 minute more until fragrant.
- In a small bowl, whisk together the ketchup, brown sugar, Worcestershire sauce, and Dijon mustard.
- Pour the sauce mixture over the ground beef and onion. Add salt and pepper. Stir to combine and simmer for 5-10 minutes, allowing the sauce to thicken slightly.
- To assemble the bowls, divide the sloppy joe mixture among four bowls. Top each bowl with a generous portion of the crispy roasted potatoes.
