Ingredients
  

For the Soup
  • 1 pound Italian sausage casings removed
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 4 cups chicken broth
  • 1 can diced tomatoes 14.5 ounce, undrained
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
For Finishing
  • 1 package refrigerated cheese tortellini 9 ounce
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley chopped, for garnish

Method
 

  1. In a slow cooker, brown the Italian sausage. Drain off any excess grease.
  2. Add the chopped onion and minced garlic to the slow cooker. Stir to combine with the sausage.
  3. Pour in the chicken broth and add the undrained diced tomatoes, Italian seasoning, salt, and pepper. Stir everything together.
  4. Cover and cook on low for 4 hours or on high for 2 hours, until the sausage is cooked through and the flavors have melded.
  5. Stir in the refrigerated tortellini and heavy cream. Cook for an additional 15-20 minutes, or until the tortellini is tender and heated through.
  6. Stir in the grated Parmesan cheese just before serving. Garnish with fresh parsley if desired.

Notes

You can substitute ground turkey or chicken for the Italian sausage. For a vegetarian option, omit the sausage and use vegetable broth.
