- In a slow cooker, brown the Italian sausage. Drain off any excess grease.
- Add the chopped onion and minced garlic to the slow cooker. Stir to combine with the sausage.
- Pour in the chicken broth and add the undrained diced tomatoes, Italian seasoning, salt, and pepper. Stir everything together.
- Cover and cook on low for 4 hours or on high for 2 hours, until the sausage is cooked through and the flavors have melded.
- Stir in the refrigerated tortellini and heavy cream. Cook for an additional 15-20 minutes, or until the tortellini is tender and heated through.
- Stir in the grated Parmesan cheese just before serving. Garnish with fresh parsley if desired.
Notes
You can substitute ground turkey or chicken for the Italian sausage. For a vegetarian option, omit the sausage and use vegetable broth.
