Method
- Place chicken breasts in the slow cooker.
- Add rinsed and drained cannellini beans, undrained diced green chilies, chicken broth, chopped onion, minced garlic, cumin, chili powder, oregano, and cayenne pepper (if using).
- Season with salt and pepper.
- Cover and cook on low for 4-6 hours or on high for 2-3 hours, until chicken is cooked through.
- Remove chicken from the slow cooker and shred it with two forks. Return the shredded chicken to the slow cooker and stir.
- Serve hot, with your favorite toppings.
Notes
You can also use pre-cooked rotisserie chicken for an even quicker meal. Simply shred the rotisserie chicken and add it to the slow cooker during the last 30 minutes of cooking.
