Slow Cooker White Chicken Chili

Ingredients
  

For the Chili
  • 1.5 lbs boneless, skinless chicken breasts
  • 2 cans cannellini beans rinsed and drained
  • 1 can diced green chilies undrained
  • 1 can chicken broth
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 0.5 tsp oregano
  • 0.25 tsp cayenne pepper optional
  • Salt and pepper to taste
For Serving (Optional)
  • Shredded cheese
  • Sour cream
  • Chopped cilantro
  • Avocado

Method
 

  1. Place chicken breasts in the slow cooker.
  2. Add rinsed and drained cannellini beans, undrained diced green chilies, chicken broth, chopped onion, minced garlic, cumin, chili powder, oregano, and cayenne pepper (if using).
  3. Season with salt and pepper.
  4. Cover and cook on low for 4-6 hours or on high for 2-3 hours, until chicken is cooked through.
  5. Remove chicken from the slow cooker and shred it with two forks. Return the shredded chicken to the slow cooker and stir.
  6. Serve hot, with your favorite toppings.

Notes

You can also use pre-cooked rotisserie chicken for an even quicker meal. Simply shred the rotisserie chicken and add it to the slow cooker during the last 30 minutes of cooking.
