- In a bowl, combine the chicken cubes with olive oil, smoked paprika, garlic powder, cayenne pepper (if using), salt, and black pepper. Mix well to coat the chicken evenly.
- Cover the bowl and refrigerate for at least 30 minutes to marinate.
- While the chicken is marinating, prepare the garlic yogurt sauce. In a small bowl, mix together the plain yogurt, minced garlic, lemon juice, chopped mint, and salt. Stir until well combined. Cover and refrigerate until ready to serve.
- Preheat your grill to medium-high heat.
- Thread the marinated chicken cubes onto skewers.
- Grill the chicken skewers for about 8-10 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
- Serve the smoky chicken skewers hot with the garlic yogurt sauce on the side.
