Spicy Korean Ramen with Grilled Beef & Creamy Sauce

Ingredients
  

For the Grilled Beef
  • 300 g ribeye or sirloin steak
  • 2 tbsp soy sauce
  • 1 tbsp gochujang
  • 1 tbsp sesame oil
  • 1 tsp brown sugar
  • 2 cloves garlic, minced
  • 1/2 tsp ground black pepper
For the Ramen
  • 2 packs instant ramen noodles discard seasoning packet
  • 2 cups chicken or beef broth
  • 1 tbsp gochugaru
  • 1 tsp soy sauce
  • 1 tsp rice vinegar
  • 1 tsp sesame oil
  • to taste Salt
For the Creamy Sauce
  • 3 tbsp mayonnaise Kewpie preferred
  • 1 tbsp sriracha or Korean chili sauce
  • 1 tsp sesame oil
  • 1/2 tsp garlic powder
  • pinch sugar optional
Garnishes
  • 2 tbsp chopped green onions
  • 1 tsp toasted black sesame seeds
  • optional extra chili oil or gochugaru

Method
 

  1. Mix soy sauce, gochujang, sesame oil, brown sugar, garlic, and pepper in a bowl. Add beef and marinate for 30 minutes or overnight.
  2. Mix all creamy sauce ingredients in a small bowl until smooth. Chill until ready to use.
  3. Simmer broth in a pot. Add gochugaru, soy sauce, vinegar, sesame oil, and salt. Cook ramen noodles until al dente, about 3 minutes. Remove from heat.
  4. Heat a grill pan or skillet over high heat. Sear beef for 2–3 minutes per side until caramelized. Let rest, then slice against the grain.
  5. Assemble bowls: add noodles and broth, top with creamy sauce, grilled beef, green onions, sesame seeds, and extra spice if desired.
