Ingredients
  

Salad
  • 5 oz fresh spinach washed and dried
  • 1 cup fresh strawberries hulled and sliced
  • 1/4 cup red onion thinly sliced
  • 1/4 cup pecans chopped and toasted
  • 2 oz feta cheese crumbled
Dressing
  • 3 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp honey
  • 1/4 tsp dijon mustard
  • 1 pinch salt
  • 1 pinch black pepper

Method
 

  1. In a large bowl, combine the spinach, sliced strawberries, red onion, and toasted pecans.
  2. In a small bowl, whisk together the olive oil, balsamic vinegar, honey, dijon mustard, salt, and pepper until well combined.
  3. Pour the dressing over the salad ingredients and toss gently to coat.
  4. Sprinkle the crumbled feta cheese over the top just before serving.

Notes

You can substitute other nuts like walnuts or almonds for the pecans. Goat cheese can be used instead of feta.
