Method
- Preheat your oven to 400°F (200°C). Lightly grease a baking dish.
- Prepare the chicken breasts. Place each chicken breast on a cutting board. Carefully slice a pocket into the thickest side of each breast, being careful not to cut all the way through.
- Make the spinach filling. In a medium bowl, combine the thawed and squeezed spinach, softened cream cheese, Parmesan cheese, minced garlic, salt, and pepper. Mix until well combined.
- Stuff the chicken. Spoon the spinach filling evenly into the pockets of the chicken breasts. You can use toothpicks to secure the opening if needed.
- Sear the chicken. Heat the olive oil in an oven-safe skillet over medium-high heat. Season the outside of the stuffed chicken breasts with salt and pepper. Sear the chicken for 2-3 minutes per side, until golden brown.
- Bake the chicken. Transfer the skillet to the preheated oven (or place the chicken in the prepared baking dish). Bake for 20-25 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
- Rest and serve. Let the chicken rest for a few minutes before serving.
