Stuffed Spinach Chicken

This recipe for stuffed spinach chicken is simple to make and delicious.

Ingredients
  

For the Chicken
  • 4 boneless, skinless chicken breasts about 6-8 ounces each
  • 1/4 cup olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
For the Spinach Filling
  • 10 ounces frozen chopped spinach thawed and squeezed dry
  • 4 ounces cream cheese softened
  • 1/4 cup grated Parmesan cheese
  • 1 clove garlic minced
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Method
 

  1. Preheat your oven to 400°F (200°C). Lightly grease a baking dish.
  2. Prepare the chicken breasts. Place each chicken breast on a cutting board. Carefully slice a pocket into the thickest side of each breast, being careful not to cut all the way through.
  3. Make the spinach filling. In a medium bowl, combine the thawed and squeezed spinach, softened cream cheese, Parmesan cheese, minced garlic, salt, and pepper. Mix until well combined.
  4. Stuff the chicken. Spoon the spinach filling evenly into the pockets of the chicken breasts. You can use toothpicks to secure the opening if needed.
  5. Sear the chicken. Heat the olive oil in an oven-safe skillet over medium-high heat. Season the outside of the stuffed chicken breasts with salt and pepper. Sear the chicken for 2-3 minutes per side, until golden brown.
  6. Bake the chicken. Transfer the skillet to the preheated oven (or place the chicken in the prepared baking dish). Bake for 20-25 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
  7. Rest and serve. Let the chicken rest for a few minutes before serving.
