Ingredients
  

For the Salad
  • 1 pound Pasta Rotini or farfalle recommended
  • 1 cup Cherry tomatoes Halved
  • 1/2 cup Cucumber Diced
  • 1/4 cup Red onion Finely chopped
  • 1/2 cup Fresh parsley Chopped
  • 1/4 cup Fresh basil Chopped
  • 2 tablespoons Fresh dill Chopped
For the Dressing
  • 1/3 cup Olive oil
  • 3 tablespoons Lemon juice
  • 1 clove Garlic Minced
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper

Equipment

  • Large pot
  • Colander
  • Large mixing bowl
  • Whisk

Method
 

  1. Cook pasta according to package directions. Drain and rinse with cold water.
  2. In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, and red onion.
  3. Add the fresh parsley, basil, and dill to the bowl.
  4. In a small bowl, whisk together the olive oil, lemon juice, minced garlic, Dijon mustard, salt, and pepper.
  5. Pour the dressing over the pasta mixture and toss to combine.
  6. Cover and chill in the refrigerator for at least 15 minutes before serving.

Notes

You can add other vegetables like bell peppers or olives. Grilled chicken or shrimp can be added for a complete meal.
