Method
- Spread butter on both sides of each slice of bread.
- Heat a heavy-based skillet or frying pan over medium-low heat. Place both pieces of bread in the skillet and toast for 1 minute on each side until warm and lightly crusted.
- Flip one slice of bread. Pile the cheddar cheese and then the mozzarella onto the toasted side. Place the other slice of bread on top, toasted side down, onto the cheese.
- Cook for 3 minutes, pressing down lightly with a spatula. If browning too quickly, reduce heat.
- Flip the sandwich and cook the other side for 3 minutes, or until golden brown and the cheese is melted.
- Transfer to a cutting board, cut in half, and serve.

The amount of butter and cheese may vary based on bread size. More is generally better. For the best results, use freshly grated cheese. A combination of a flavorful cheese like cheddar or gruyere with mozzarella provides a good balance of taste and meltability.
