Method
- Toast the english muffin halves in a toaster.
- Heat olive oil or butter in a skillet over medium heat.
- Add the eggs to the skillet and cook them to your desired doneness. You can fry them or scramble them.
- Add the ham slices to the skillet and warm them through.
- Place the cooked eggs and ham on one half of the toasted english muffin.
- Sprinkle the shredded cheese and chopped chives over the eggs and ham.
- Season with salt and pepper to taste.
- Top with the other half of the english muffin.
Notes
To make two sandwiches at a time, toast the English muffins in the toaster and sauté two sets of eggs in the pan.
