Ingredients
  

For the Breakfast Sandwich
  • 1 english muffin cut in half
  • 2 eggs
  • 2-4 slices ham black forest or any kind
  • 1/3 cup cheese finely shredded, Mexican cheese recommended
  • 1 tsp chives finely chopped
  • to taste salt
  • to taste pepper
  • 1 Tbsp olive oil or butter to saute

Equipment

  • Skillet
  • Toaster

Method
 

  1. Toast the english muffin halves in a toaster.
  2. Heat olive oil or butter in a skillet over medium heat.
  3. Add the eggs to the skillet and cook them to your desired doneness. You can fry them or scramble them.
  4. Add the ham slices to the skillet and warm them through.
  5. Place the cooked eggs and ham on one half of the toasted english muffin.
  6. Sprinkle the shredded cheese and chopped chives over the eggs and ham.
  7. Season with salt and pepper to taste.
  8. Top with the other half of the english muffin.

Notes

To make two sandwiches at a time, toast the English muffins in the toaster and sauté two sets of eggs in the pan.
