Method
 

  1. Preheat your oven to 350 degrees F.
  2. Melt the butter in a large skillet over medium heat.
  3. Add the minced garlic, chopped onion, and diced celery to the skillet. Cook until tender, about 5 minutes.
  4. In a large mixing bowl, combine the dried bread cubes with the cooked vegetable mixture. Add the rosemary, thyme, fresh parsley, salt, and pepper. Toss to combine.
  5. Add 1 cup of vegetable broth and stir. Gradually add the remaining vegetable broth, 1/4 cup at a time, until the bread is moist. You may not need the full 2 cups.
  6. Spread the stuffing mixture onto a greased cookie sheet and cover with foil. Bake for 35 minutes.

Notes

If your bread is not dry, cube it and bake on a cookie sheet at 350 degrees F for 8 minutes to dry it out before starting the recipe.
