Ingredients
  

For the Sandwich
  • 8 slices sourdough bread
  • 6 tablespoons butter, softened divided
  • 3 tablespoons mayonnaise
  • 3 tablespoons manchego cheese finely shredded
  • 1/8 teaspoon onion powder
  • 4 ounces brie cheese rind removed
  • 1/2 cup sharp white cheddar cheese shredded
  • 1/2 cup Monterey jack cheese shredded
  • 1/2 cup gruyere cheese shredded

Equipment

  • Griddle or large skillet
  • Spatula
  • Cheese grater

Method
 

  1. In a small bowl, combine the manchego cheese, mayonnaise, and onion powder. Mix well.
  2. Spread 1 tablespoon of softened butter on one side of each slice of bread.
  3. On the unbuttered side of two bread slices, layer the brie cheese, then the cheddar, Monterey jack, and gruyere cheeses. Top with the manchego mixture.
  4. Place the remaining two bread slices on top, buttered side up.
  5. Heat a griddle or large skillet over medium heat. Place the sandwiches on the hot surface.
  6. Cook for 4-5 minutes per side, or until the bread is golden brown and the cheese is melted and gooey.
  7. Slice in half and serve immediately.

Notes

You can experiment with different types of bread like challah or brioche. For an extra layer of flavor, consider adding a thin slice of tomato or some caramelized onions inside your sandwich before grilling.
