- In a small bowl, combine the manchego cheese, mayonnaise, and onion powder. Mix well.
- Spread 1 tablespoon of softened butter on one side of each slice of bread.
- On the unbuttered side of two bread slices, layer the brie cheese, then the cheddar, Monterey jack, and gruyere cheeses. Top with the manchego mixture.
- Place the remaining two bread slices on top, buttered side up.
- Heat a griddle or large skillet over medium heat. Place the sandwiches on the hot surface.
- Cook for 4-5 minutes per side, or until the bread is golden brown and the cheese is melted and gooey.
- Slice in half and serve immediately.
Notes
You can experiment with different types of bread like challah or brioche. For an extra layer of flavor, consider adding a thin slice of tomato or some caramelized onions inside your sandwich before grilling.
