Watermelon Berry Fruit Pizza

Ingredients
  

For the Pizza Base
  • 1 large watermelon about 12 inches in diameter, rind removed, cut into 1-inch thick rounds
For the Topping
  • 8 oz cream cheese softened
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 cups mixed berries such as strawberries, blueberries, raspberries

Equipment

  • Large serving platter

Method
 

  1. Place the watermelon round on a large serving platter.
  2. In a medium bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until smooth.
  3. Spread the cream cheese mixture evenly over the top of the watermelon round, creating a "sauce" layer.
  4. Arrange the mixed berries over the cream cheese layer.
  5. Chill the fruit pizza in the refrigerator for at least 30 minutes before serving.
  6. Slice and serve.

Notes

You can add other fruits like kiwi, grapes, or mandarin oranges. For a firmer base, you can pat the watermelon dry with paper towels before spreading the cream cheese.
