Watermelon Chia Parfait

Ingredients
  

For the Chia Pudding
  • 1/2 cup chia seeds
  • 2 cups almond milk or other milk
  • 2 tablespoons maple syrup or to taste
For the Watermelon Layer
  • 2 cups cubed watermelon
For the Fruit Topping
  • 1 cup mixed berries fresh or frozen
  • 1/2 cup sliced strawberries

  • Serving glasses

Method
 

  1. Make the chia pudding: In a bowl, whisk together chia seeds, almond milk, and maple syrup. Let it sit for 5 minutes, then whisk again to prevent clumping. Cover and refrigerate for at least 2 hours, or until thickened.
  2. Prepare the watermelon: In a blender, puree the cubed watermelon until smooth. You should have about 1.5 cups of puree.
  3. Assemble the parfaits: In serving glasses, layer the ingredients. Start with a layer of watermelon puree, followed by a layer of chia pudding, then a layer of mixed berries, and another layer of chia pudding. Top with sliced strawberries.
  4. Serve immediately or chill for later.

Notes

You can adjust the sweetness of the chia pudding to your preference. Feel free to use any combination of fruits for the topping.
