Watermelon Coconut Lime Popsicles

Refresh yourself with these easy watermelon, coconut, and lime popsicles. They are perfect for a hot day and a hit with kids.

Ingredients
  

For the Popsicles
  • 4 cups seedless watermelon cubed
  • 1/2 cup full-fat coconut milk
  • 2 tablespoons fresh lime juice
  • 1-2 tablespoons honey or maple syrup optional, to taste

Equipment

  • Blender
  • Popsicle molds

Method
 

  1. Combine the cubed watermelon, coconut milk, and lime juice in a blender. Blend until smooth.
  2. Taste the mixture and add honey or maple syrup if you prefer a sweeter popsicle. Blend again briefly.
  3. Pour the mixture into popsicle molds, leaving a little space at the top for expansion.
  4. Insert popsicle sticks and freeze for at least 4 hours, or until solid.
  5. To unmold, run the popsicle molds under warm water for a few seconds.

Notes

You can add small pieces of watermelon or mint leaves to the molds before freezing for extra texture and flavor.
