Method
- Combine the cubed watermelon, coconut milk, and lime juice in a blender. Blend until smooth.
- Taste the mixture and add honey or maple syrup if you prefer a sweeter popsicle. Blend again briefly.
- Pour the mixture into popsicle molds, leaving a little space at the top for expansion.
- Insert popsicle sticks and freeze for at least 4 hours, or until solid.
- To unmold, run the popsicle molds under warm water for a few seconds.
Notes
You can add small pieces of watermelon or mint leaves to the molds before freezing for extra texture and flavor.
