Ingredients
  

For the Salsa
  • 4 cups seedless watermelon diced
  • 1 cup red onion finely diced
  • 1/2 cup fresh cilantro chopped
  • 1/4 teaspoon salt or to taste

Method
 

  1. Combine the diced watermelon, red onion, minced jalapeño, and chopped cilantro in a mixing bowl.
  2. Squeeze the lime juice over the mixture.
  3. Add salt to taste and gently toss to combine.
  4. Serve immediately or chill for later. The salsa will keep fresh in the refrigerator for up to 2 days.

Notes

For best results, use a firm, ripe watermelon. You can adjust the amount of jalapeño to control the spice level.
