  • 1-1/2 cups butter softened
  • 3 cups sugar
  • 5 large eggs room temperature
  • 2 tablespoons lemon juice
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 3/4 cup 7UP soda
For the Glaze
  • 1-1/2 cups confectioners' sugar
  • 1 tablespoon lemon or lime juice
  • 1 to 2 tablespoons 7UP soda to reach desired consistency
  • 1/2 teaspoon lemon or lime zest optional

Method
 

  1. Preheat your oven to 350°F (175°C). Grease and flour a 10-inch tube pan.
  2. In a large bowl, cream together the softened butter and sugar until the mixture is light and fluffy, about 5 to 7 minutes. Add the eggs one at a time, making sure to beat well after each addition. Stir in the lemon juice and vanilla extract.
  3. Gradually add the all-purpose flour to the wet ingredients, alternating with the 7UP soda. Beat well after each addition until just combined. Be careful not to overmix.
  4. Pour the batter into your prepared pan. Bake for 65 to 75 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let the cake cool in the pan for 20 minutes before inverting it onto a wire rack to cool completely.
  5. To make the glaze, combine the confectioners' sugar and lemon juice in a small bowl. Add enough 7UP soda, a tablespoon at a time, until you reach your desired drizzling consistency. If you like, stir in the lemon or lime zest.
  6. Once the cake has cooled completely, drizzle the glaze over the top.
