- Set your oven rack to the upper-middle position. Preheat your oven to 425 degrees F.
- Line a baking sheet with aluminum foil. Place a wire rack on top of the foil. Spray the rack with non-stick spray.
- Pat the chicken wings very dry with paper towels. Place the dried wings in a large bowl.
- In a small bowl, combine the salt, pepper, garlic powder, paprika, and baking powder. Sprinkle this mixture over the wings and toss to coat them evenly.
- Arrange the seasoned wings in a single layer on the prepared wire rack, skin side up.
- Bake on the upper-middle oven rack. Turn the wings every 20 minutes until they are crispy and browned. This may take up to 1 hour, depending on the size of your wings.
- Remove the wings from the oven and let them stand for 5 minutes. Transfer the wings to a clean bowl and toss them with your chosen sauce.
- To make the Buffalo sauce: In a medium saucepan over medium heat, stir together the hot sauce, brown sugar, and water. Mix until the sugar dissolves. Remove from heat and let it cool to room temperature before adding to the wings, or prepare it ahead of time and refrigerate.

Notes
Ensure you use aluminum-free baking powder, not baking soda. For other sauce ideas, consider honey BBQ, ranch, honey garlic, or BBQ sauce. If you have an air fryer, you can also make air fryer chicken wings.
